The novel Notre-Dame de Paris, commonly known as "The Hunchback of Notre-Dame", is a true masterpiece and very different from the Disney version you may know: the characters are darker, the story is about a tragic love, and all in one, the novel is just a beautiful homage to the cathedral, written by one of the best French authors and at a time when the city of Paris was thinking of destroying the monument. A small warning though: it's a big book and there are a lot of descriptions so don't expect a quick easy read, both in English and French. There are also a lot of "old words" that may be tricky to understand, especially for those who do not know the vocabulary of church architecture.
